Hairy Crab Oolong
Mao Xie aka “Hairy Crab” is a type of Anxi oolong from Fujian. Mao Xie means literally “Hair of the Crab” and refers to the hairs on the tea leaves that give it a unique appearance. Mao Xie has a thicker and sweeter taste than other oolongs, like Ti Kwan Yin.
This tea comes from a spring lot, traditionally processed and lightly oxidized. The leaves are rolled, a mix of light and dark greens, and unfurl to a truly delicious cup with delicate “floral peach-like” notes.
